Abstract In the hydrolysis of starch to dextrose by hydrochloric acid at 100°, two reactions occur from the commencement of the heating process—( a ) a rapid hydrolysis of starch to dextrose, and ( b ) a much slower decomposition of the dextrose produced. After correction for the dextrose destroyed, it is evident that starch is quantitatively converted to dextrose according to the stoichiometric relationship 90 parts starch = 100 parts dextrose.
