To adapt to dynamic fluctuations of environmental temperature, plants have evolved sophisticated mechanisms for thermosensing and response. Heat stress is one of the key stress factors that restrict plant growth and development and agricultural production, directly threatening global food security.In recent years, the intensification of global warming has led to a sustained increase in both the frequency and intensity of high-temperature events, posing greater challenges to plants as they become more susceptible to heat stress.Therefore, elucidating the molecular regulatory mechanisms of plant thermosensing and response is a crucial strategy for breeding heat-tolerant crop varieties and safeguarding global food security. This review systematically elaborates on the latest research advances in plant thermosensing at the cellular level, and summarizes the adaptive and responsive mechanisms of plants to heat stress from organellar and molecular dimensions, aiming to deepen the understanding of the regulatory network governing plant heat stress responses.
