Carnosine dinitrosyl iron complexes (DNIC) effectively inhibit the formation of free radicals formed during myoglobin oxidation, and also reduce the formation of diene conjugates that occur during arachidonic acid peroxidation. The antiradical effect of carnosine DNIC is higher than that of carnosine. The inclusion of carnosine as a ligand in DNIC enhances its antioxidant properties.
