This working paper provides insight on the determinants and trends of pulse consumption over time in France using data from the Kantar Worldpanel (KWP) database. We first estimate a Truncated Normal Hurdle (TNH) model to analyze how the decision to purchase pulses and the quantity purchased are impacted by socio-demographic variables characterizing French households. We then evaluate how prices affect the consumption of different types of pulse-based products.
