Abstract Aroma compounds have an important role in how we perceive food through our senses. They are not only responsible for pleasant aromas, but taste, freshness, and overall food quality are also influenced by these compounds. This comprehensive review looks into classification, sources, modern extraction techniques, and analytical methods. It presents innovations related to these compounds while focusing on the improvement of food quality and alignment with consumer preferences. There are many sources from which these compounds are produced. These sources can be naturally produced, synthesized, or produced through microbial fermentation. The unique flavours of foods like wine, coffee, chocolate, and spices are due to the presence of these volatile aroma compounds. These compounds also contribute to food preservation and confer health-related benefits. Modern techniques have made the extraction of aroma compounds more effective, efficient, and sustainable. In addition, emerging analysis techniques can detect and study these compounds in further detail.
