The present work mainly focused on the development and evaluation of functional beetroot nachos by incorporating beetroot powder as a natural and nutritious ingredient. Beetroot (Beta vulgaris L.) is well known for its rich content of dietary fiber, antioxidants, phenolic compounds, betalains, vitamins, minerals, and natural nitrates, which provide several health benefits including antioxidant, anti-inflammatory, and cardiovascular protective effects. The formulation of the product was carried out by using varying concentrations along with corn flour and rice flour to develop value-added snack products. Sensory evaluation of sample C indicated slightly higher acceptable scores for appearance, texture, taste, and overall acceptability and obtained higher scores for overall quality attributes compared to the control and other samples. The developed product also meets the growing consumer demand for natural, plant-based, and health-oriented snacks. It has strong potential as a nutritious functional snack with commercial applicability in the food industry.
