Relationship between gastric secretion and infection Why does the stomach secrete acid? Animal stomachs are specialised organs which produce a highly acidic secretion. This is found in a wide spectrum of animals from fish to mammals. In man, acid secretion is not essential for life, or indeed for adequate digestion, as evidenced by the continued survival of achlorhydric patients with pernicious anaemia.
