So-called "traditional" or "local" agricultural products are now at the center of major debates with high stakes. Both animal and vegetal products raise an array of research issues such as their link to a specific locality, tradition or know-how. Biodiversity is a common theme that is omnipresent in all of these approaches. It can be appreciated and studied through plant varieties, domestic breeds, product transformation, or agricultural systems. This approach brings out different levels of complexity. From the microbiological diversity maintained through cheese-making to the diversity of a landscape maintained through farm systems oriented toward a specific production, a strategic role is played by traditional know-how, techniques, and in general, social factors.
