본 연구에서는 멸치액젓의 활용성을 높이기 위한 효소처리에 따른 pH의 변화와 염도의 변화를 알아보고, 멸치액젓의 기능성 향상을 위한 효소 첨가에 따른 총 폴리페놀 함량, 총 플라보노이드 함량, 2,2-diphenyl-1-picrylhydrazyl(DPPH) 소거능, 2,2"-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid(ABTS) 소거능의 결과에 대해 분석하였다. 멸치액젓의 효소처리는 각 효소에 알맞은 온도와 pH, 시간동안 효소처리하여 실험을 진행하였다. pH의 경우 가장 큰 폭의 변화량을 보인 효소는 6.81±0.02/5.62±0.02 로 lipase(LP)이다. 모든 시료가 전체적으로 감소하는 경향을 보였다. 다음으로 염도의 경우 가장 높게 나타난 효소는 VMG가 4.4±0.06 %로 가장 높게 나타났다. 반대로 염도가 가장 낮게 나타난 시료는 2.5±0.06 %로 FAP이며, 효소처리를 하지 않은 NF보다 염도가 감소한 것으로 나타났다. 총 폴리페놀 함량의 경우 FAP가 152.65±11.67 mg GAE/ml로 가장 높았으며, 가장 낮은 총 폴리페놀 함량을 나타낸 것은 82.48±4.39 mg GAE/ml로 C12이다. 다음으로 총 플라보노이드 함량은 FAP가 36.22±3.50 mg CE/ml로 가장 높은 함량을 나타냈고, 가장 낮은 플라보노이드 함량은 12.61±1.45 mg CE/ml로 C12이다. 항산화 활성의 경우 DPPH가 59.87±0.04로 C12가 가장 높은 소거능을 보였다. ABTS의 경우 FAP가 99.87±0.00 %로 가장 높은 소거능을 보였으며, 가장 낮은 소거능을 나타낸 것은 LP로 34.65±0.01 %의 소거능을 나타냈다. 본 연구의 결과를 토대로 멸치액젓의 효소처리는 생리활성과 연관되어 있으며, 멸치액젓의 기능성을 향상시키기에 적합한 것으로 생각되어 멸치액젓의 효소처리는 활용 가능성이 높다고 판단된다. 또한, 활용 가능성이 가장 높은 효소는 Foodpro Alkaline Proease(FAP)로 판단된다. VMG exhibited the highest salinity (4.4±0.06%), while FAP displayed the lowest (2.5±0.06%), indicating a decrease compared to non-enzyme-treated samples. FAP had the highest total polyphenol content (152.65±11.67 mg GAE/ml), with C12 being the lowest (82.48±4.39 mg GAE/ml). Total flavonoid content was highest in FAP (36.22±3.50 mg CE/ml) and lowest in C12 (12.61±1.45 mg CE/ml). DPPH showed the highest antioxidant activity (59.87±0.04) in C12, while ABTS demonstrated the highest in FAP (99.87±0.00%) and the lowest in LP (34.65±0.01%). This study suggests that enzyme treatment enhances the physiological activity of anchovy fish sauce, particularly with Foodpro Alkaline Protease (FAP), which shows the highest utilization potential.
