This précis presents Deliverable 3.3, a dataset of cooking recipes from European regions, spanning from the Roman Empire to the present day. The dataset (see link for full dataset) was compiled with the goal of understanding the evolution of culinary techniques, tastes, and trends across both spatial and temporal dimensions within the European continent, as well as their connections with external influences, such as Arab cuisine. The report is a deliverable (D3.3) for the European Union-funded RELISH (Reframing European gastronomy Legacy through Innovation, Sustainability and Heritage) project, which innovates culinary recipes as digital and cultural tools to promote cultural heritage and connect with emerging adults.
