This report outlines the process of testing and generating historical connections in medieval recipes in a kitchen testing environment. Based on these activities, the primary objective was to design a methodology for interpreting contact, similarities, and movement using a particular case study (Arabic sikbaj and Catalan escabetx). The results will also help bridge RELISH’s historical recipe data visualisations with experimental and experiential applications. The report is a deliverable (D3.4) for the European Union-funded RELISH (Reframing European gastronomy Legacy through Innovation, Sustainability and Heritage) project, which innovates culinary recipes as digital and cultural tools to promote cultural heritage and connect with emerging adults.
