Abstract

ABSTRACT Blueberries are rich in anthocyanins and are commonly processed into blueberry juice, jam, and other blueberry derivatives. During such deep processing, a substantial amount of anthocyanins remains in the peel residue. In this study, the adsorption of anthocyanins by seven macroporous resins (X‐5, DM‐21, SP‐207, XAD‐16, XAD‐7HP, LS‐305, and AB‐8) was evaluated to develop a simple and efficient process for large‐scale separation and purification of blueberry anthocyanins from the peel residue. Static screening experiments indicated that DM‐21, SP‐207, and LS‐305 resins exhibited favorable adsorption/desorption performance. The adsorption isotherm data fitted well with the Langmuir model, and the adsorption kinetics followed the pseudo‐second‐order model. Dynamic column adsorption and desorption tests further demonstrated that LS‐305 resin is a promising adsorbent for industrial applications in the recovery of blueberry anthocyanins from peel residue. After one round of operation, the resulting dried pigment products contained 33.5% blueberry anthocyanins, which corresponded to a 12.6‐fold increase over the crude extract.
