Abstract

This chapter examines Brighton’s seafood restaurants and their contribution to sustainable seafood tourism. Brighton is a historic and highly popular tourist destination on the south coast of the UK, recognised for its strong sustainability credentials, including commitments to net zero and sustainable food policies. By analysing the online promotion of Brighton’s seafood restaurants, such as web pages, blogs, and menus, alongside diners’ reviews, this chapter evaluates their sustainable seafood practices through three themes: Sustainability Communication by Restaurants; Cues to Sustainable Seafood in Restaurant Offerings and It’s the dining experience. These are then used to identify opportunities for improvement and future development.
