Abstract

In order to explore the effects of age and gender on the nutritional value of the calipash from the Chinese soft-shelled turtle (Pelodiscus sinensis), this study detected and analyzed the morphology index, basic nutritional components, amino acid content, and collagen fiber density of the calipash tissues from female and male Yellow River strain of Pelodiscus sinensis (the Yellow River strain of P. sinensis) age 2 to 6 years. The results showed that: (1) The ratios of calipash width/carapace width, calipash thickness/body height, and calipash weight/body weight differed significantly between males and females (PP. sinensis. No significant difference was observed in calipash width/carapace width among different ages, whereas significant difference were found in calipash thickness/body height and calipash weight/body weight (PP. sinensis. The calipash weight/body weight ratio showed significant differences across both age and gender (PP. sinensis. (2) The moisture, ash, and crude protein content in the calipash of the Yellow River strain of P. sinensis differed significantly between males and females (PP. sinensis did not differ significantly, whereas crude fat content showed a significant difference (PP. sinensis. (3) Total amino acid (TAA) content of the calipash of the Yellow River strain of P. sinensis differed significantly between males and females (PP. sinensis were significantly higher in females than in males (PP. sinensis differed significantly among ages (PP. sinensis across all age groups. (6) Collagen fiber density in the calipash of the Yellow River strain of P. sinensis differed significantly between males and females (PPPP. sinensis (PP. sinensis. These findings provide a reference for optimizing aquaculture strategies and guiding consumer selection of the Yellow River strain of P. sinensis.
