Abstract

Cyclodextrins (CDs) are cyclic oligosaccharides in which d-(+)-glucopyranose units are linked α-(1,4)-glycosidically into a ring and have been produced by industrial-scale. CDs are very attractive materials with a unique structure and the simple function of inclusion of guest molecule. The inclusion property of CDs shows a variety of effects such as stabilization, solubilization, powderization, slow-release and masking of guest molecules. Therefore, CDs have long been used for various products in the food, nutraceutical, hygiene and cosmetics fields. This review introduces the basic properties, safety, inclusion effects of CDs and their applications.
