Covariant Palatini gravity sources curvature from mass-flux normal to b^μ = ∇^μ S / |∇ S|. Preferred direction inherits from thermodynamics. Torsion emerges from connection. Screening follows RG flow. β evolves at one loop. Theory recovers GR to 10^-52. Three predictions: neutron Ramsey phase asymmetry 3. 2 × 10^-26 rad (PSI n2EDM, 2027–2028), 1 μas M87 shadow eccentricity (EHT-2, 2027–2028), 10^-6% Hawking temperature gradient (JWST, 2028–2029).
