This study explores the use of Azolla pinnata as a natural supplement in broiler feed, focusing on its effects on meat quality and consumer acceptance. After cultivating and processing the aquatic fern into a dry powder, it was incorporated into the broiler diet at a 1% inclusion rate. Throughout a 33-day rearing period, broilers were monitored for growth performance and overall health. No adverse effects on mortality or feed consumption were observed. Post-slaughter nutritional analysis revealed that chickens fed the Azolla-based diet produced meat with a significantly higher protein content. Notably, this is the first study to include a sensory analysis of poultry meat derived from birds fed Azolla, offering novel data on consumer perceptions. Taste panel evaluations revealed that the enriched meat was well-rated for flavor, aroma, texture, and visual appeal. These results suggest that Azolla pinnata is not only a cost-effective and nutrient-rich supplement but also enhances meat quality from a consumer standpoint. Further research is recommended to determine optimal dosage levels and assess long-term impacts for broader commercial use.
