PANCBOOK: A PEDAGOGICAL DESIGN FOR TRAINING SCHOOL COOKS TO ENCOURAGE THE USE OF UNCONVENTIONAL FOOD PLANTS (PANC) IN SCHOOL MEALS Abstract School cooks play a crucial role in the physical and cognitive development of students through access to healthy and balanced food. It is necessary to incorporate their knowledge and practices linked to the dynamics and context of issues such as ethnic-racial relations and sustainability. For this ongoing master's research, we asked: how can a pedagogical training design based on the Freirean perspective encourage school cooks to use PANC in school meals? In this sense, we intend to develop the training of school cooks through a pedagogical design based on the Freirean perspective, encouraging the use of PANC in school meals. Specifically, we want to: introduce PANCs and the possibilities for their use in the diet, emphasizing the Afroperspective of selected species; discuss the importance of the educational role of school cooks, their knowledge and their training according to a pedagogical design that takes into account their specificities; develop the training of school cooks using the Freirian circle of culture as a research device and formative provocation in a hybrid format; and produce the PANCbook, a digital book, collaboratively with the cultural practitioners containing the recipes produced, nutritional information and the historical and social context of their use. This is a research-training project in cyberculture, of an applied nature and qualitative approach, whose research device will be the circle of culture. Data will be collected using field diaries, questionnaires and focus groups. The study is at the stage of outlining the pedagogical design of the training together with the prior planning of the hybrid workshops to be applied.
