Considered one of the main seeds in the Amazon region, the Brazil nut (Bertholletia excelsa) has a very high nutritional and economic potential, being rich in minerals and serving as an alternative source of proteins. Allied to it, there is açaí (Euterpe oleracea), an extremely energetic Amazonian fruit, rich in anthocyanins with antioxidant power and with several benefits for the body. In this context, the project aimed to combine these beneficial characteristics of these two foods to create a healthy product with high energy potential, also carrying out its toxicological analysis, measuring the level of selenium and the presence of aflatoxins at the end of the process. It was then observed that the produced product showed potentially positive results, however, specific legislation for these functional beverages is necessary .
