The current research presents an environmentally friendly reflux approach for synthesising a nanocomposite with multifloral honey (MH) doped cerium oxide (CeO2). The formed material was analysed using X-ray diffraction (XRD), transmission electron microscopy (TEM), Brunauer-Emmett-Teller (BET), Zeta potential (PZC), Fourier transform infra-red spectroscopy (FT-IR), and UV-visible spectroscopy (UV-Vis). Optical property such as reflectance, refractive index, band gap, conductivity, and dielectric constant were examined using MH-doped CeO2 analysis revealed supportive results. The electrochemical evaluation showed a specific capacitance (Csp) of around 149 Fg−1 and a diffusion coefficient of 1.49 × 10−4 using 3 M KOH solution. The composite also revealed better sensing properties towards lead nitrate, cow urine and mercury chloride sensors. First-order rate kinetics were described in photocatalytic investigation using MH-doped CeO2 catalyst, showing an excellent degradation performance of methyl violet (MV) and Congo red (CR). Furthermore, the synthesised compound's IC50 value of 200.37 mg/mL for 2, 2-Diphenyl-1-picrylhydrazyl (DPPH) radical scavenging demonstrated around 79.59% antioxidant activity.
