Market analysis and quality management of healthy food products for vegetarians

International trends in the development of vegetarianism are examined, and an analysis of the market and range of products for vegetarianism is carried out. The role of vegetarianism in reducing the carbon footprint and reducing environmental burden is considered. In Russia, the production of plant analogues of meat products amounted to almost 60 thousand tons in 2022. An analysis of the degree to which meat analogues meet the requirements of physiological consumption standards was carried out. The necessity of modeling and managing the nutritional value of products for vegetarians is substantiated.
