Traditional culture media often fail to mimic the natural environment of food-borne bacteria, thereby impeding accurate metabolic profiling. This study developed a novel chicken meat-derived broth (CMB) using various sterilization methods. Metabolic profiles of CMBs and bacteria were analyzed using a UHPLC-Q-Exactive Orbitrap Mass Spectrometry. Among the methods tested, the filtered and pasteurized CMB (FP-CMB) demonstrated the highest metabolomic similarity to chicken meat. FP-CMB effectively supported microbial growth without inducing changes in turbidity or contamination. The metabolites in FP-CMB played a role in altering energy synthesis and glutathione metabolism of bacteria, showcasing distinctions from those observed in commercial media. This study unveils the potential of FP-CMB as an innovative, representative, and efficient culture medium for microbiological studies, providing precise insights into bacterial metabolomics in meat products.
