Starch is one of the most relevant natural polysaccharides in current scientific research due to its abundance and availability through diverse plant sources, and its remarkable physicochemical properties, in which its biodegradability and simple structural modification stand out. These qualities have made starch one of the most interesting polymeric biomolecules for obtaining systems with agricultural applications, mainly hydrogel for the controlled release of water molecules and agrochemicals.Based on the above outlook, this mini-review addresses the fundamental aspects of starch related to its structure, extraction, and modification, its use to obtain hydrogels, and the main applications of these in the agricultural field.
