Dataset reveals contamination levels of mycotoxins in legume-based foods, supporting food safety assessments.
This dataset contains occurrence data on regulated mycotoxins, emerging mycotoxins, masked mycotoxins, and tropane alkaloids in legume-based foods collected in Italy and Thailand in 2025. A total of 132 commercial samples were analysed, including raw legumes, legume flours, legume-based pasta, and legume-based snacks, representing both conventional and organic products. Samples were analysed using a validated UHPLC–MS/MS multi-analyte method based on a dilute-and-shoot extraction approach. Forty-two compounds were targeted, including aflatoxins (AFB1, AFB2, AFG1, AFG2, AFM1), ochratoxins, trichothecenes (DON, HT-2, T-2, NIV and acetylated forms), fumonisins, zearalenone and derivatives, Alternaria toxins, enniatins, beauvericin, fusaric acid, sterigmatocystin, and the tropane alkaloids atropine and scopolamine. For each sample, the dataset reports: food category and product type country of purchase/production organic or conventional status concentration values for each analyte (µg/kg), including left-censored data (LOD/LOQ) analytical performance parameters where relevant (LOD, LOQ) The dataset was generated to support comparative contamination profiling across geographical areas with different climatic conditions, dietary habits, and regulatory frameworks. It also enables secondary use for cumulative exposure assessment, co-occurrence analysis, and methodological benchmarking of multi-toxin LC–MS/MS approaches in complex legume matrices. This dataset underpins the study “Multi-mycotoxins and tropane alkaloids occurrence in legumes: comparative exposure assessment between Italy and Thailand” and is released to promote transparency, reproducibility, and reuse in food safety risk assessment and mycotoxin research.
