The degree of polymerization of the fructosans (one glucose plus the number of fructose units per fructosan molecule) in the stem bases of timothy and bromegrass was estimated from extracts obtained with graded ethanol concentrations. Fructosans of increasing size were extracted as the ethanol concentration was decreased. Timothy contained a fructosan with a maximum degree of polymerization near 260 as compared with near 26 for bromegrass.
