Study reports lipid profiles and health indices in free range domestic fowl eggshells, suggesting their nutritional impact.
This study reports on the chromatographic determination of the crude fat (CF), fatty acids (FAs), sterols (STs), phospholipids (PLs) and the nutrient fat health indices: atherogenicity index (AI), thrombogenicity index (TI), hypocholesterolemic/hypercholesterolemic (H/h) ratio, health promoting index (HPI), unsaturation index (UI), EPA+DHA, flesh lipid quality (FLQ), LA/ALA ratio, PUFA/SFA ratio, trans-fatty acid (TFA), peroxidizability index (PI) in the eggshells of the free range domestic fowl lipid content. The classic indices such as ΣSFA, ΣMUFA, ΣPUFA, Σn-6 PUFA, ΣTFA, ΣUFA, and n-6 PUFA/ n-3 PUFA were used to calculate the health indices. The data from the CF, FAs, STs, PLs, classic indices and the health indices were discussed and compared with literature values, their health implications to likely direct/indirect consumers of the domestic fowl eggshells.
