Phenolic compounds are important bioactive constituents in cereals. Due to phenolic structural heterogeneity, efficient extraction and accurate detection remain critical challenges. Traditional extractions are limited by high solvent consumption and low efficiency, while advanced extractions offer improved efficiency and environmental sustainability. For detection methods, spectrophotometry enables rapid quantification, chromatography provides detailed compositional analysis, and emerging spectroscopic techniques offer non-destructive alternatives combined with chemometrics. Beyond functional properties, phenolics contribute to preventing chronic diseases and synergistically enhance intestinal health. This review summarizes classification, extraction, detection, and health benefits of cereal phenolics, aiming to support future research and the development of phenolic-enriched products.
