Many N nitroso compounds are known to be carcinogen. The analysis, formation and occurrence of N nitroso componds in the environment are reviewed. These compounds can be divided into two categories, nitrosamines and nitrosamines, which differ in their chemical stability and the mecanism of their carcinogenicity. ompounds of ascorbic acid, a -tocopherol, gallic acid, bisulfito and sulfamate are inhibitor for formation of N-nitrosamines. Analysis for 1V nitrosamines in environment used GC-TEA, HPLC-TEA and high resolution GCMS. Certain meat and fish products, alcoholic beverages, tabacco and smoke, cutting fluids of metal grinding, tire and rubber products, drugs and cosmetitics, pesticides, atmosphere and water are contaminated with N nitrosamines.
