THIN-LAYER drying rates of sunflower seed were determined experimentally as a function of temperature, relative humidity and initial moisture content. The data were fit to several thin-layer drying models. The drying air temperature had the greatest effect on drying rate. Page's equation with drying constants as a function of drying air temperature provided the best fit to the data.
