Research was conducted to determine the effect of load-application rate on force required to break eggs, the deformation of the egg versus applied force, and the stiffness modulus (breaking force divided by deformation at breaking). Results indicated that loading rate significantly affects breaking force and deformation of the egg at breaking. The stiffness modulus and deformation at 5 lb. of applied force did not change significantly with changes in loading rate. Correlations between these parameters, and with specific gravity of the egg and egg shell thickness, did not appear to be affected by loading rate.
