High resolution nuclear magnetic resonance spectroscopy has been used to identify the main acylated steryl glycosides isolated from Euryale ferox as 24‐ethylcholest‐5‐en‐3β‐O‐β‐D‐pyranoglucosyl palmitate and 24‐ethylcholesta‐5,22 E ‐dien‐3β‐ O ‐β‐D‐pyranoglucosyl palmitate. The application of this technique to the identification of acylated steryl glycosides within complex mixtures is described.
