Rosemary, Rosmarinus officinalis L., has become one of the natural antioxidants used to replace synthetic antioxidants or allow the use of synthetics in lesser quantities to preserve food and cosmetic products. This literature review summarizes the many antioxidant trials in which rosemary and rosemary extracts have been tested for antioxidant activity in comparison with other chemicals. As an antioxidant, rosemary has become to be regarded as potentially safer than chemical synthetic antioxidants.
