Pulsed NMR technique was used to determine total water, bound/mobile fraction and their force of binding in starch and hydroxyethyl starch. The accessibility of moisture to the hydrophilic sites was evaluated. Substitution of hydrophilic, bulky, hydroxyethyl group to starch increased the bound water. The force of binding increased with the increase of molar substitution of hydroxyethyl groups. The accessibility of starch to moisture is increased by substitution of hydroxyethyl groups.
