The fungus A. pullulans (= Pullularia pullulans) produces exceptionally large amounts of extracellular sucrase when grown on sucrose monopalmitate, in the presence of Tween 80, and with limited shaking. Under optimum conditions, the culture filtrates contained as much sucrase as commercially available concentrates. The specific activity of the A. pullulans enzyme, after acetone precipitation, was as high as that of commercial preparations.
