A description is given of the quantitative determination by gas chromatography of soluble substances contained in sweet corn (Zea mays saccharata). The results obtained from these determinations have shown that quotients of sucrose to fructose and sucrose to glucose concentrations may be a good measure of the degree of maturity attained. Moreover, gas chromatographic analysis appears to provide a specific method of quality control for stored sweet corn.
