The lactose operon of Escherichia coli is composed of at least three structural genes which correspond to β-galactosidase (z), β-galactoside permease (y) and transacetylase (Ac), (Fig. 1). These genes are controlled by the operator (o) and the product of the regulator gene (i) (Jacob and Monod, 1961a).
