The aerobic oxidation of ethyl and methyl gallates to ellagic acid in aqueous sodium bicarbonate solution, pH 7-9, and phosphate buffer, pH 8-0, is reported. Autoxidation is incomplete, and mushroom polyphenoloxidase accelerates the initial uptake of oxygen in these media.
