The reported examples (polyethylene oxide-H 2 O liquid mixtures and soybean lecithin-based polymer-like gels) put into evidence that the dynamical properties (vibrational, translational and relaxational) of the H 2 O molecules in these environments deeply differ from those in the bulk.
