A simple method was developed for simultaneously determining histamine, cadaverine, putrescine, tyramine and tryptamine in fish products. The methodology involves the extraction of amines from muscle tissue by methanol and the subsequent formation of their dansyl derivatives. These derivatives were determined by isocratic liquid chromatography and the dansylamines were thoroughly separated in approximately 20 min. Validation of the method was assessed by: specificity, linearity, recovery, limit of detection (LOD) and limit of quantification (LOQ), stability of derivatives and UV detection wavelengths.
