The relationship of ether extract to moisture of the eviscerated carcass was determined. A highly significant negative correlation coefficient was found to exist between percent ether extract and percent moisture in the chilled and non-chilled eviscerated carcass. A method to predict the percent ether extract from the simple moisture determination is presented.
