Gliadin showed a glass to rubber transition typical of an amorphous polymer. Mechanical spectrometry and differential scanning calorimetry were used to determine the glass transition temperature (Tg) in the moisture range of 6.2–27.2% (wet basis, wb) and bone dry to 16.6% (wb), respectively. The Tg obtained with both of these techniques could be superimposed. The Tg could be successfully predicted using the Gordon‐Taylor equation.
