Using fluorescence techniques to study changes in membrane structure as a function of ethanol concentration and alcoholism, it was found that ethanol primarily affects probes located at the membrane-water interface. Changes in the lipid composition of membranes during alcoholism were detected by fluorescent probes that partition into the hydrophobic interior of the membrane.
