Narrative review highlights functional interactions of hydrocolloids and emulsifiers in processed foods, suggesting pathways to stabilize food matrices and extend shelf life.
Hydro collides and emulsifiers are the major multipurpose food ingredient, often used in the food system for its improvement, foods when subjected to major processing technologies which require the heat, light, and energy, to function. However, the use of these processing technologies have detrimental effects on food quality attributes. Microbial contamination, shelf life, food texture and flavour are enhanced with hydrocollides and emulsifiers in food industry. The chemistry of some food grade H&E and their molecular mechanism are highlighted in this review. The properties of these functional food matrix is complex and needs through investigation and research. Hence, the chemical, physical and biological properties and its utilization in foods and feed require time and space in modern scientific platform. The sustainability with food improvement can be harnessed to sustain both the food and pharma companies. Foods development and enhancement require a diverse set of ingredients and enhancers for its suitable regulation and food H&E can provide a way to reduce such crucial factor from the fraction of the whole mixture of the ingredients in foods and in medicines. The study includes the functionality and critical food grade functions of some H&E in foods.
