Fresh beef stored in nitrogen at 0° was spoiled by Gram positive rods. Almost all the organisms isolated were Microbacterium spp., although in one experiment about 10% of the organisms isolated were Lactobacillus spp. The numbers and types of organisms isolated were similar on each of two media incubated under aerobic and anaerobic conditions.
