THE static equilibrium moisture content of pumpkin seeds, as well as of kernels and hulls was measured at temperatures ranging from 10 to 60C and relative humidities ranging from 5 to 85%. The applicability of the desorption and adsorption data to four equilibrium moisture models was tested. The Modified Henderson model gave the best fit to the experimental data. Equilibrium moisture content values of hulls were greater than the values of kernels..
