A high-performance liquid chromatographic (HPLC) method is proposed for the determination of pectins in raspberries, as galacturonic acid. The method is optimized with forward optical scanning detection. The mobile phase is water, acidified to pH 2.2. The Cv of the method, which is the variation in the amount of pectins found in 10 portions of alcohol-insoluble solids obtained independently from a single sample of freeze-dried raspberries, is calculated by determining the ratio of the standard deviation to the arithmetic average and found to be 2.3. The Cv% of the measurement, which is the variation of 10 HPLC determinations of galacturonic acid in a single hydrolyzed alcohol-insoluble solid solution, is 1.08%. The limit of detection is 0.04 mg/mL.
