The levels of glycolytic intermediates, enzymatic activities and lactate concentration were estimated in excised rice roots anaerobically grown in the presence or absence of exogenous nitrate in order to establish the conditions which permit a higher fermentative activity in roots fed with nitrate. The presence of nitrate in the culture medium increased the level of glucose, pyruvate and the activity of pyruvate kinase, and decreased the level of lactic acid. The different amount of lactic fermentation and the consequent involvement of pH in the regulation of glycolytic flux under anoxia are discussed with a view to explaining the greater alcoholic fermentation carried out by nitrate-fed roots.
