Modeling Simultaneous Heat and Mass Transfer for Microwave Drying on Apple

The effects of heat on moisture diffusion, inner evaporation and internal-heat generation were considered by numerically simultaneous models of heat and mass transfer for microwave drying on apple, assuming that the heat-transfer and mass-transfer coefficients are variable. Application was made to drying by finite difference calculus and predicted results agree with the experimental data.
