Substantial quantities of nitrate can be lost from maturing bacon without any corresponding accumulation of nitrite. This loss of nitrate does not occur if the growth of bacteria on the surface is reduced by swabbing with a solution of formaldehyde. It is suggested that in normal commercial practice this loss of nitrate would take place after the matured sides had left the factory.
