In aerated, glucose‐limited continuous culture, Lactobacillus plantarum altered its metabolic pathways of acid production in response to changes in environmental pH. Under acidic conditions, acetate and L‐lactate production decreased with decreasing pH, whereas levels of D‐lactate increased. In the presence of 6% NaCl, acetate and lactate production continued, but no acetate was detected at pH 4.5.
